- 450 g lentejas
- carnes:
- 2 manitas de Cerdo
- 1 chorizo colorado
- 300 g panceta salada
- 2 chuletas de cerdo
- 1 churrazco de cuadril
- Vegetales:
- 5 papas chicas
- 2 cebollas
- 3 cebollas de verdeo
- 2 puerros
- puñado perejil
- 2 Dientes ajo
- 3 rodajas calabaza en cubos (a gusto)
- aceite de oliva
- sal fina a gusto
- pimienta a gusto
- 2 cucharadas pimentón dulce
- 1 lata puré de tomate
- 2 vasos vino blanco seco
Instructions to make to make Guiso de lentejas
- Cortamos en rodajas el chorizo colorado, en cubos de 1, 5 aprox. las chuletas y el churrasco de cuadril, con la panceta salada la trozamos en rectángulos de 1x2 cm o 3cm según el trozo que consigamos. (Todo cortado en un recipiente esperando)
- Lavamos bien y cortamos finamente la cebolla de verdeo y el puerro, tanto parte blanco como verde. La cebolla la cortamos al medio y luego en finos cuadraditos. El perejil y ajo también muy chiquito. Finalmente las rodajas de calabaza se cortan en cubos de 1x1cm aprox. y las papas también en cubos. (todo cortado en un recipiente espera).
- Ponemos agua a hervir con una pizca de sal, y vertemos todas las lentejas.
- Por otro lado colocamos una olla grande de 35cm de boca mínimo y 30cm de alto, donde haremos todo el guiso. Allí colocamos aceite de oliva y colocamos todas las carnes cortadas, revolver con cuchara de madera a fuego medio. Hasta que comience a sudar salamos y seguimos revolviendo, agregamos todas las verduras y agregamos dos vaso de vino blanco seco.
- Esperamos que se evapore bien el alcohol agregamos un cubo de caldo de verdura o carne es indistinto y con un cucharón sacamos un poco del agua de las lentejas para ir hidratando a medida que vemos que se seca el contenido de la olla. Pasaron 20 25 minutos ya y en la otra cacerola debe estar hirviendo las lentejas, las cuales largan allí sus jugos, vertemos con cuidado sin quemarnos todo el contenido de la cacerola con las lentejas + el agua.
- Revolvemos rectificamos la sal, ahora es el momento de agregar puré de tomate la lata completa. Bajamos el fuego a mínimo y cocinamos por 1hora 45 minutos.
